My husband bought a huge can of nacho sauce and I know we won't eat it all before it goes bad. Does anyone know if we can re-can it into smaller jars? It says not to freeze it or I would. Just keep it in a plastci conatiner in the fridge. That stuff has enough preservatives in it to keep for weeks, even months. Mix it into casseroles, soups, sauce (make a 50/50 of hallandaise and nacho cheese), chili cheese dogs, fires or burgers etc...Sounds like it's time for a nacho party. You could probably store it in the fridge for a week...or maybe two...in airtight plastic containers--but I don't think it's going to make it last that much longer. You might try using it in other recipes--cheesy tuna casserole (or chicken, yeah?), cheesy tomato soup (with croutons!), or maybe as a topping for mexican lasagna? It doesn't have to be cheese on chips to use it up! :)I have a feeling it would go bad if you do that, next tme don't let your husband buy such a huge container.
